A bootloader is a computer program responsible for booting your controller. That means it selects the appropriate code on startup, and it provides the means to flash your controller with new firmware. Generally, you won't need to touch the bootloader.

The nice!nano uses the Adafruit nRF52 Bootloader. You can read more about its features, updating the bootloader, and using DFU to flash firmware on Adafruit's Adafruit_nRF52_Bootloader Github repository.
